Health and Wellness are NEVER complete without an extremely vital food type: Raw, Fermented Foods! The benefits of Raw and fermented foods, like Kombucha, are incredible! Not only will Kombucha help you with digestion, supplying your body with vital enzymes and beneficial bacteria to help break down foods, but it also helps with detoxification, elimination, and overall keeps you healthy and happy! 🙂

SUPPLIES
Big Stainless Steel Pot (NO NON-STICK COOKWARE)
1 Gallon Glass Jug
Linen Cloth & Rubber Band (or a clean hair tie)
Glass Bowl
Organic Black Tea (3 Tbsp Loose or 7 Tea Bags)
1 cup Organic Refined Cane Sugar

DIRECTIONS: To make 1 gallon Kombucha
FIRST FERMENTATION
1.
Bring 4 cups filtered water to a boil. Turn off heat, add your tea/tea bags, let steep for 8 minutes.
2.
Remove tea bags, stir in 1 cup of organic refined cane sugar until dissolved.
3.
Place concentrated sweet tea in the gallon glass jar, add 8 cups of COLD filtered water and allow to cool for about 5-10 minutes until cool to the touch.
4.
Add in 1 cup Kombucha starter liquid and stir. Let sit for about 2 minutes.
5.
Place Kombucha culture (SCOBY) in prepared tea mixture, cover with linen cloth, and let sit for one – two weeks, based on how sour you like it. Taste until desired flavor is reached!

(Note: The longer you ferment, the more sugar will be consumed, and the less sweet/more sour it becomes.)

SECOND FERMENTATION (Optional, you can drink first fermentation Kombucha just fine 🙂
1.
Remove SCOBY from now fermented Kombucha and set aside, along with 1 cup starter liquid for next batch.
2.
Take desired about 1 cup organic fruits/herbs/etc. and puree in a blender with about 4oz water and 1tsp of organic refined cane sugar.
3.
If using growler, place all puree in jar and then add kombucha. If using 12-16oz bottles/jars, add about 20% puree to 80% kombucha tea.
4.
Place second ferment on counter for 4 days – 1 week, depending on how fizzy you want them.
5.
Transfer to fridge, allow to chill, and enjoy!
